Cheesecake Stuffed Chocolate Chip Cookies
Decadent chocolate chip cookies with a creamy cheesecake center!
Ingredients
For the Cheesecake Filling:
3 oz cream cheese, softened
3 tablespoons powdered sugar
For the Chocolate Chip Cookie Dough:
1/2 cup butter, slightly softened
1/2 cup brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 & 3/4 cup flour
3 tablespoons corn starch
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup semi-sweet chocolate chips (plus more for topping)
Instructions:
Prepare the Cheesecake Filling:
In a small bowl, mix together the cream cheese and powdered sugar until smooth.
Scoop teaspoon-sized portions onto a baking sheet lined with parchment paper and freeze until firm, about 30 minutes.
Prepare the Chocolate Chip Cookie Dough:
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, corn starch, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips.
Assemble the Cookies:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop a tablespoon of cookie dough and flatten it slightly. Place a frozen cheesecake filling ball in the center and wrap the dough around it, ensuring it is completely covered. Add more dough if necessary.
Place the stuffed dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Press a few extra chocolate chips onto the tops of the cookies.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
