Creamy Pistachio Cheesecake Bars
Rich and creamy pistachio cheesecake bars with a nutty crust, perfect for pistachio lovers!
Ingredients
For the Crust:
1 cup graham cracker crumbs
1/2 cup ground pistachios
1/4 cup chopped pistachios
1/4 cup granulated sugar
1/2 cup melted butter
For the Filling:
16 oz cream cheese, softened
1 cup granulated sugar
2 large eggs
1/2 cup Greek yogurt
1 teaspoon vanilla extract
1/2 cup finely chopped pistachios
1/2 cup pistachio paste
1/2 cup sweetened condensed milk
For Garnish:
1/2 cup chopped pistachios
Directions
Preheat Oven: Preheat to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
Prepare the Crust: In a medium bowl, mix graham cracker crumbs, ground and chopped pistachios, sugar, and melted butter. Press evenly into the baking pan and bake for 10 minutes. Let cool.
Make the Filling: In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Add Greek yogurt, vanilla, chopped pistachios, pistachio paste, and condensed milk, blending until smooth.
Assemble and Bake: Pour the cheesecake mixture over the cooled crust, spreading evenly. Bake for 35-40 minutes, until the center is set and edges are lightly browned.
Cool and Chill: Cool to room temperature, then refrigerate for at least 2 hours.
Serve: Cut into bars, garnish with chopped pistachios, and enjoy!
