MARRY ME SALMON
Ingredients:
Salmon Fillets: 3-4 fillets, skin removed
Seasonings:
1 tsp dried basil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried thyme
3/4 tsp red pepper flakes
1/4 tsp salt
1/4 tsp black pepper
For Cooking:
2 tbsp olive oil
1 cup chicken stock, unsalted
1/2 cup heavy cream
1/3 cup chopped sun-dried tomatoes
5 garlic cloves, minced
1/2 cup freshly shredded Parmesan cheese
Fresh basil
Directions:
1. In a small bowl, mix together basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and black pepper.
2. Season both sides of the salmon with half of the spice mixture.
3. Heat olive oil in a large skillet over medium-high heat. Place salmon fillets flesh side down and sear for 5 minutes on each side. Remove and set aside.
4. In the same skillet, reduce the heat to low and sautƩ garlic and sun-dried tomatoes for 1-2 minutes.
5. Pour in the chicken stock to deglaze the pan, scraping up any browned bits.
6. Stir in heavy cream, Parmesan cheese, and the remaining spice mix. Mix until fully combined.
7. Let the sauce simmer on medium-low heat for 10-15 minutes until thickened. Taste and adjust seasoning if necessary.
8. Return the salmon to the skillet, spooning sauce over each fillet. Cook for an additional 3-5 minutes.
9. Garnish with fresh basil and serve warm.
