Sloppy Joe Biscuit Casserole
Ingredients
1 lb ground beef
1 small onion, diced
1 green bell pepper, diced
1 (15 oz) can Sloppy Joe sauce (like Manwich) or homemade (see below)
1 (8 oz) can refrigerated biscuits (like Pillsbury Grands)
1 ½ cups shredded cheddar cheese
1 tablespoon olive oil
Salt and pepper, to taste
Optional Homemade Sloppy Joe Sauce:
1 cup tomato sauce
1 tablespoon tomato paste
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon mustard
1 teaspoon chili powder
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Step 2: Cook the Beef Mixture
In a large skillet, heat the olive oil over medium heat.
Add the ground beef, onion, and green bell pepper, and cook until the beef is browned and the vegetables are softened (about 6-8 minutes). Drain any excess fat.
Stir in the Sloppy Joe sauce (or homemade sauce ingredients) and simmer for 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
Step 3: Assemble the Casserole
Pour the beef mixture into the prepared baking dish and spread it out evenly.
Sprinkle the shredded cheddar cheese over the top of the meat.
Step 4: Add the Biscuits
Separate the refrigerated biscuits and cut each biscuit into quarters.
Arrange the biscuit pieces on top of the cheese, covering the surface of the casserole.
Step 5: Bake the Casserole
Place the dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and cooked through.
Step 6: Serve
Let the casserole cool for a few minutes before serving. Garnish with fresh parsley or green onions if desired.
