Cheesy Ground Beef and Rice Casserole – a comforting family favorite!
Ingredients:
1 lb ground beef
2 cups beef broth
3 garlic cloves, minced
1 small onion, finely chopped
1 cup uncooked white or brown rice
1 can (10.5 oz) cream of mushroom soup
1 cup milk
1 tsp paprika
1 tsp dried parsley
½ tsp salt
½ tsp black pepper
2 cups shredded cheddar cheese (divided)
1 cup frozen peas and carrots (optional)
Cooking spray or butter for greasing
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
Cook the Ground Beef:
In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat. Add the minced garlic and chopped onion to the skillet and sauté until the onion is soft and fragrant.
Combine the Ingredients:
Stir in the beef broth, cream of mushroom soup, and milk. Add the paprika, dried parsley, salt, and black pepper. Mix in the uncooked rice, frozen peas, and carrots (if using). Bring the mixture to a simmer and cook for 5-7 minutes, allowing the flavors to combine.
Transfer to Baking Dish:
Pour the beef and rice mixture into the prepared baking dish, spreading it out evenly. Sprinkle 1 ½ cups of shredded cheddar cheese over the top.
Bake the Casserole:
Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil, sprinkle the remaining ½ cup of shredded cheddar cheese on top, and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
Serve:
