Soft, fluffy cupcakes bursting with juicy peaches and topped with luscious honey cream cheese frosting!
Ingredients:
For the Cupcakes:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup buttermilk
½ cup fresh or canned peaches, finely chopped
2 tbsp honey
For the Honey Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
¼ cup honey
2 cups powdered sugar
1 tsp vanilla extract
Directions:
Preheat & Prepare – Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Mix Dry Ingredients – In a bowl, whisk together flour, baking powder, baking soda, and salt.
Cream Butter & Sugar – In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and honey.
Combine Wet & Dry – Alternate adding the dry ingredients and buttermilk to the butter mixture, mixing just until combined. Fold in chopped peaches.
Bake – Fill cupcake liners ¾ full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
Make the Frosting – Beat cream cheese and butter until smooth. Add honey, vanilla, and powdered sugar, mixing until creamy.
Frost & Serve – Pipe or spread frosting onto cooled cupcakes. Garnish with peach slices and a drizzle of honey. Enjoy!
