This Bacon-Wrapped Apple-Stuffed Pork Loin is the ultimate comfort dish!
Ingredients:
1 pork loin (about 2 lbs), butterflied
1 cup diced apples (Granny Smith or Honeycrisp)
6 slices thick-cut bacon, cooked and chopped (reserve bacon fat)
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
1/2 teaspoon ground cinnamon
2 tablespoons brown sugar
1 tablespoon olive oil
1/2 cup breadcrumbs
Salt and black pepper, to taste
6-8 slices uncooked bacon for wrapping
Directions:
In a skillet, heat the reserved bacon fat and olive oil over medium heat. Add the onion and garlic, sautéing until softened.
Stir in the diced apples, cinnamon, and brown sugar. Cook for 3-5 minutes until the apples begin to soften.
Add the cooked bacon pieces, breadcrumbs, thyme, salt, and pepper. Mix well and remove from heat. Let the mixture cool slightly.
Preheat your oven to 375°F (190°C).
Lay the butterflied pork loin flat on a clean surface and season generously with salt and pepper.
Spread the apple-bacon filling evenly over the pork, leaving a small border around the edges.
Roll the pork loin tightly and secure it with kitchen twine.
Lay uncooked bacon slices over the rolled pork loin, tucking the ends underneath.
Place the bacon-wrapped pork loin on a roasting rack set in a baking dish. Roast for 45-60 minutes, or until the internal temperature reaches 145°F (63°C).
For crispy bacon, broil the pork loin for 2-3 minutes at the end of roasting.
Let the pork loin rest for 10 minutes before slicing. Serve warm with roasted vegetables or a fresh green salad.
