Ingredients
1 lb (450g) large shrimp, peeled and deveined
8 oz (225g) smoked sausage, sliced
2 tbsp olive oil
1 tbsp Cajun seasoning (plus more to taste)
1 tsp paprika
Salt and pepper to taste
1 small onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
12 oz (340g) penne pasta
1/2 cup Parmesan cheese, grated
Fresh parsley, chopped (for garnish)

Season the Shrimp:
In a bowl, season the shrimp with Cajun seasoning, paprika, salt, and pepper. Set aside.
Sauté the Sausage and Shrimp:
In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.
Add the sausage slices and cook until browned, about 2-3 minutes per side. Remove and set aside.
Add the shrimp to the pot and cook until pink, about 1-2 minutes per side. Remove and set aside with the sausage.
Cook Vegetables:
In the same pot, add the remaining olive oil. Sauté the diced onion, red bell pepper, and garlic until the onion becomes translucent and the vegetables soften, about 3-4 minutes.
Add Pasta and Liquids:
Pour in the chicken broth and heavy cream, stirring to combine.
Add the uncooked pasta to the pot and bring to a boil. Reduce heat to medium, cover, and let it cook for 10-12 minutes, or until the pasta is al dente, stirring occasionally.
Finish with Shrimp, Sausage, and Cheese:
Once the pasta is cooked and the sauce has thickened, add the shrimp, sausage, and Parmesan cheese. Stir to combine until everything is well-coated in the sauce.
Garnish and Serve:
Sprinkle with fresh parsley and a bit of extra Cajun seasoning, if desired. Serve hot and enjoy!
