Hearty Homestyle Chicken Stew
A warm, comforting bowl of tender chicken, hearty vegetables, and savory herbs in a rich, flavorful broth—perfect for chilly evenings!
Ingredients:
1.5 lbs boneless, skinless chicken thighs, cubed
2 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
4 carrots, sliced
3 celery stalks, sliced
3 medium potatoes, cubed
1 cup mushrooms, sliced
4 cups chicken broth
1 cup water
1/2 cup frozen peas
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Directions:
Cook Chicken: Heat olive oil in a large pot over medium heat. Add cubed chicken, season with salt and pepper, and cook until lightly browned. Remove and set aside.
Sauté Aromatics: In the same pot, add onions, garlic, carrots, and celery. Sauté for 5-6 minutes until softened and fragrant.
Add Mushrooms & Potatoes: Stir in mushrooms and potatoes, cooking for another 2 minutes.
Combine Ingredients: Pour in chicken broth and water. Add thyme, rosemary, and return chicken to the pot.
Simmer: Bring to a boil, then reduce heat to low, cover, and let it simmer for 30-40 minutes, or until vegetables are tender.
Add Peas: Stir in frozen peas and let cook for another 5 minutes until peas are warmed through.
Serve: Ladle into bowls, garnish with fresh parsley, and enjoy!
