Homestyle Smothered Chicken
Tender chicken breasts in a rich, savory onion gravy—comfort food at its finest!
Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1/2 cup all-purpose flour (for dredging)
2 tbsp olive oil
2 tbsp butter
1 large onion, thinly sliced
2 cloves garlic, minced
1 1/2 cups chicken broth
1/2 cup heavy cream
1 tsp paprika
1/2 tsp dried thyme
Fresh parsley, chopped, for garnish
Directions:
Prepare the Chicken: Season chicken breasts with salt and pepper, then dredge each piece in flour, shaking off the excess.
Sear the Chicken: In a large skillet, heat olive oil and 1 tbsp butter over medium heat. Add the chicken and cook for 5-6 minutes per side until golden brown. Remove chicken from skillet and set aside.
Cook the Onions: In the same skillet, add remaining butter and sliced onions. Cook for 6-8 minutes until onions are softened and caramelized. Add minced garlic and cook for another 1 minute until fragrant.
Make the Gravy: Sprinkle paprika and thyme over the onions, then pour in chicken broth. Bring to a simmer, scraping up any browned bits from the skillet. Stir in heavy cream and cook for 2-3 minutes until the gravy thickens slightly.
Combine and Serve: Return chicken to the skillet, spooning gravy over the top. Simmer for 5 minutes, or until the chicken is cooked through. Garnish with fresh parsley and serve hot with mashed potatoes or rice.
