Cheesy Meatball Subs
Ingredients
1 lb ground beef (80% lean)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 tbsp fresh parsley, chopped (plus extra for garnish)
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 cups marinara sauce
4 sub rolls
1 1/2 cups shredded mozzarella cheese
2 tbsp butter, melted (optional, for toasting rolls)
Directions
Make the Meatballs:
Preheat your oven to 400°F (200°C). In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, minced garlic, parsley, oregano, salt, and pepper. Mix until well combined.
Form and Bake the Meatballs:
Shape the mixture into golf ball-sized meatballs (about 12-16 meatballs). Place them on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until cooked through.
Simmer in Marinara:
While the meatballs bake, heat the marinara sauce in a large skillet over medium heat. Once the meatballs are done, transfer them to the skillet, coating them in the sauce. Let them simmer for 5 minutes.
Prepare the Subs:
If desired, brush the inside of the sub rolls with melted butter and toast in the oven until golden brown.
Assemble and Bake:
Place 3-4 meatballs in each sub roll. Top generously with marinara sauce and shredded mozzarella cheese. Place the subs on a baking sheet and bake in the oven until the cheese is melted and bubbly, about 5 minutes.
Garnish and Serve:
Remove from the oven and garnish with chopped parsley. Serve immediately while hot and cheesy!
