Creamy Chicken Alfredo Soup
This rich, creamy Chicken Alfredo Soup is like a cozy bowl of your favorite pasta, with tender chicken and pasta in a luxurious Parmesan broth!
Ingredients:
• 2 tbsp olive oil
• 1 lb boneless, skinless chicken breasts, cubed
• 1 tsp salt
• 1/2 tsp black pepper
• 3 cloves garlic, minced
• 4 cups chicken broth
• 1 cup heavy cream
• 1 cup milk
• 1 1/2 cups small pasta (like rotini or shells)
• 1 cup freshly grated Parmesan cheese
• 1/2 tsp Italian seasoning
• 2 cups fresh spinach leaves
• Fresh parsley, for garnish
Directions:
1. Cook Chicken: In a large pot, heat olive oil over medium heat. Add cubed chicken, season with salt and pepper, and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.
2. Add Garlic and Broth: In the same pot, add minced garlic and sauté for 1 minute until fragrant. Pour in the chicken broth, heavy cream, and milk, stirring well.
3. Cook Pasta: Bring the mixture to a gentle boil. Add the pasta and cook until tender, about 10-12 minutes.
4. Add Cheese and Seasoning: Reduce heat to low. Stir in Parmesan cheese and Italian seasoning, stirring until cheese melts and soup thickens slightly.
5. Finish with Spinach and Chicken: Return the cooked chicken to the pot and add spinach. Stir until spinach wilts, about 2-3 minutes.
6. Serve: Ladle soup into bowls and garnish with fresh parsley.
