Cheesy Green Chile Chicken Enchiladas
These creamy, zesty green chile chicken enchiladas are bursting with flavor and perfect for a cozy dinner!
Ingredients:
• 2 cups cooked shredded chicken
• 1 tbsp olive oil
• 1 small onion, finely chopped
• 3 cloves garlic, minced
• 1 cup green enchilada sauce
• 1 cup sour cream
• 1 can (4 oz) diced green chiles
• 1/2 tsp cumin
• 1/4 tsp salt
• 1/4 tsp black pepper
• 8 small flour tortillas
• 1 1/2 cups shredded Monterey Jack cheese
• Fresh cilantro, for garnish
Directions:
1. Prepare Filling: In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened, about 3-4 minutes. Stir in shredded chicken, green chiles, cumin, salt, and pepper.
2. Make Sauce: In a separate bowl, mix green enchilada sauce with sour cream until smooth. Pour half of the sauce into the skillet with the chicken mixture and stir well.
3. Assemble Enchiladas: Preheat oven to 375°F (190°C). Grease a baking dish. Spoon about 1/4 cup of the chicken filling into each tortilla, roll up, and place seam-side down in the dish.
4. Top with Sauce & Cheese: Pour the remaining sauce over the enchiladas and sprinkle with shredded cheese.
5. Bake: Bake for 20-25 minutes, until cheese is melted and bubbly. Garnish with fresh cilantro.
