Creamy Chicken & Orzo Soup
This comforting, creamy chicken and orzo soup is packed with veggies, tender chicken, and a hint of lemon!
Ingredients:
• 2 tbsp olive oil
• 1 lb boneless, skinless chicken breasts, cubed
• 1 tsp salt
• 1/2 tsp black pepper
• 1 small onion, finely chopped
• 3 cloves garlic, minced
• 2 medium carrots, diced
• 2 celery stalks, diced
• 6 cups chicken broth
• 1 cup orzo pasta
• 1 cup heavy cream
• 1/2 tsp dried thyme
• 1/2 tsp dried rosemary
• 1 cup fresh spinach leaves
• Juice of 1 lemon
• Fresh parsley, for garnish
Directions:
1. Cook Chicken: In a large pot, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.
2. Sauté Veggies: In the same pot, add onion, garlic, carrots, and celery. Sauté until veggies are softened, about 5 minutes.
3. Add Broth and Orzo: Pour in chicken broth and bring to a boil. Add orzo pasta and cook until tender, about 8-10 minutes.
4. Finish with Cream & Herbs: Reduce heat to low. Stir in heavy cream, thyme, and rosemary. Return chicken to the pot and add spinach, stirring until spinach wilts.
5. Season & Serve: Add lemon juice for a bright finish. Ladle into bowls, garnish with fresh parsley, and serve warm.
