Cranberry Orange Bread
Citrus Cranberry Delight Loaf
RecipeIngredients:
For the Bread:
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup granulated sugar
1 tablespoon orange zest
½ cup buttermilk
½ cup canola oil, or other neutral tasting oil
½ cup orange juice
2 large eggs
1 teaspoon pure vanilla extract
1 ½ cups fresh cranberries
For the Glaze:
1 cup powdered sugar
2 to 3 tablespoons orange juice
Directions:
To Make the Bread:
Preheat the oven to 350°F, and grease a 9 x 5-inch loaf pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a small bowl, mix the sugar and orange zest until the sugar is light orange in color. Set aside.
In a large bowl, whisk buttermilk, oil, orange juice, eggs, and vanilla. Add the flour mixture and orange zest/sugar mixture, whisking just until combined. Do not overmix.
Fold in the cranberries with a wooden spoon.
Pour the batter into the prepared loaf pan and bake for 65-75 minutes. If the bread browns too quickly, cover with aluminum foil.
The bread is done when a toothpick inserted comes out with a very light crumb. Cool in the pan for 10-15 minutes before transferring to a cooling rack.
To Make the Glaze:
Combine powdered sugar and orange juice in a medium bowl.
Whisk or mix on low until smooth. Adjust orange juice for desired consistency.
Drizzle over cooled bread, slice, and serve.
