Baked Garlic Parmesan Chicken Mini Meatloaves
Ingredients
1 lb ground chicken
1/2 cup breadcrumbs
1/3 cup grated Parmesan cheese
1 large egg
3 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper, to taste
1 cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Directions
Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare Mixture: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
Form Meatloaves: Divide the mixture into 4 equal portions and shape each into a small loaf. Place them on the prepared baking sheet.
Bake: Bake for 20 minutes. Remove from the oven and top each mini meatloaf with shredded mozzarella.
Finish Baking: Return to the oven and bake for an additional 5–7 minutes, until cheese is melted and golden.
Serve: Garnish with fresh parsley and serve warm!
