These Philly Cheesesteak Quesadillas are a quick and delicious twist on the classic sandwich, featuring tender beef, sautéed peppers and onions, and melted cheese all packed into a crispy tortilla. Perfect for a fast lunch or dinner!
Ingredients
– 1 lb thinly sliced beef steak (such as ribeye or flank steak)
– 1 tablespoon olive oil
– 1 small onion, thinly sliced
– 1 small green bell pepper, thinly sliced
– 1 small red bell pepper, thinly sliced
– Salt and pepper to taste
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 4 large flour tortillas
– 2 cups shredded provolone or mozzarella cheese
– Optional: sliced mushrooms or hot sauce
Instructions
1. Cook the steak:
Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced steak and season with salt, pepper, garlic powder, and onion powder. Cook for 3-5 minutes until browned and cooked through. Remove the steak from the skillet and set aside.
2. Sauté the veggies:
In the same skillet, add the sliced onion and bell peppers. Cook for 5-7 minutes, stirring occasionally, until the vegetables are soft and slightly caramelized. Add the cooked steak back into the skillet and mix everything together.
3. Assemble the quesadillas:
Heat a clean skillet or griddle over medium heat. Place a tortilla on the skillet, sprinkle 1/2 cup of shredded cheese evenly over half of the tortilla, then add a portion of the steak and vegetable mixture. Fold the tortilla in half to cover the filling.
4. Cook the quesadillas:
Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
5. Slice and serve:
Cut the quesadillas into wedges and serve immediately. Optionally, serve with hot sauce, sour cream, or a side salad.
