Cozy Crockpot Tuscan Chicken

Tender, slow-cooked chicken simmered in a creamy, garlicky Tuscan sauce with sun-dried tomatoes and spinach. A rich, one-pot meal that’s perfect for busy days!

Ingredients:

1.5 lbs chicken breasts (boneless, skinless)
Salt and pepper, to taste
1 tsp Italian seasoning
1 tbsp olive oil
4 garlic cloves (minced)
1 cup heavy cream
1/2 cup chicken broth (low sodium)
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes (drained and chopped)
1 tsp dried basil
2 cups baby spinach leaves
Fresh parsley (chopped, for garnish)

Directions:

Prepare Chicken: Season chicken breasts with salt, pepper, and Italian seasoning.
Sear Chicken (optional for extra flavor): In a skillet, heat olive oil over medium heat and sear each side of the chicken breasts until golden. Transfer to crockpot.

Make Sauce: In the same skillet, add minced garlic and sauté until fragrant. Add chicken broth, heavy cream, Parmesan cheese, and dried basil, stirring until smooth.

Assemble in Crockpot: Pour the creamy sauce over the chicken in the crockpot. Add sun-dried tomatoes.
Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is tender.

Add Spinach: About 15 minutes before serving, add spinach to the crockpot and stir until wilted.
Serve: Garnish with fresh parsley. Perfect over pasta, mashed potatoes, or rice!
