Creamy Alfredo Lasagna Soup
Ingredients
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 lb Italian sausage (mild or hot)
5 cups chicken or vegetable broth
1 can (14 oz) crushed tomatoes
1 ½ cups heavy cream
1 cup grated parmesan cheese
8 lasagna noodles, broken into pieces
1 tsp dried Italian seasoning
Salt and pepper, to taste
Fresh parsley or basil, for garnish
Instructions
Sauté Aromatics:
Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3–4 minutes. Stir in minced garlic and cook for another minute.
Cook the Sausage:
Add Italian sausage to the pot, breaking it apart as it cooks. Cook until browned and fully cooked through.
Add Broth and Tomatoes:
Pour in the chicken or vegetable broth and add the crushed tomatoes. Stir to combine and bring the mixture to a simmer.
Cook the Noodles:
Add broken lasagna noodles to the pot and cook for about 8–10 minutes or until the noodles are tender.
Make It Creamy:
Stir in heavy cream and grated parmesan cheese until the soup becomes rich and creamy. Season with Italian seasoning, salt, and pepper to taste.
Serve:
Ladle the soup into bowls and garnish with fresh parsley or basil. Add extra parmesan cheese if desired.
