Ingredients:
_For the Pasta:_
– 2 eggs
– 200g (about 7 oz) flour
_For the Filling:_
– 200g (about 7 oz) sheep’s ricotta
– A drizzle of olive oil
– Salt
– Pepper
– 20g (about 0.7 oz) grated Parmesan
– Dried thyme
_For the Spinach Cream:_
– 100g (about 3.5 oz) spinach
– A drizzle of olive oil
– 30ml (about 1 oz) water
_Other:_
– Butter
– Demi-glace (optional)

**Directions:**

1. Mix eggs and flour to make the dough. Roll it out thinly.

2.Mix ricotta, olive oil, salt, pepper, Parmesan, and thyme.

3.Cut dough into squares, place some filling in the center, fold over, and seal edges.

4.Boil spinach with a bit of oil, then blend it with water to make a cream.

5.Boil them for about 4 minutes.

6.Drain and sautƩ briefly in butter, water, and demi-glace (if using).

7.Place ravioli on spinach cream.
