• 1 lb ground beef chuck (for extra richness)
• 1 medium onion, diced
• 1 green bell pepper, diced
• 1 red bell pepper, diced
• 3 cloves garlic, minced
• 2 tablespoons tomato paste
• 1 (28 oz) can crushed tomatoes
• 1 (15 oz) can diced tomatoes
• 1 (15 oz) can kidney beans, drained and rinsed
• 1 (15 oz) can black beans, drained and rinsed
• 1 cup beef broth
• 2 tablespoons chili powder
• 1 tablespoon ground cumin
• 1 teaspoon smoked paprika
• 1/2 teaspoon cayenne pepper (optional, for extra heat)
• Salt and black pepper to taste
Toppings (Optional):
• Shredded cheddar cheese
• Sour cream
• Chopped green onions
• Fresh cilantro
Directions:
1. Cook the Meat: In a large pot or Dutch oven, brown the ground beef and ground chuck over medium-high heat, breaking it apart with a spoon as it cooks. Drain any excess fat.
2. Add Veggies: Add the onion, green bell pepper, red bell pepper, and garlic to the pot. Sauté for 5-6 minutes until vegetables are softened.
3. Flavor with Tomato Paste: Stir in the tomato paste and cook for 1-2 minutes to enhance its flavor.
4. Add Tomatoes and Beans: Pour in the crushed tomatoes, diced tomatoes, kidney beans, and black beans. Stir to combine.
5. Add Broth and Spices: Pour in the beef broth, then add chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to blend all the flavors.
6. Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 45 minutes to 1 hour, stirring occasionally, until flavors meld and chili thickens.
7. Adjust and Serve: Taste and adjust seasonings as desired. Serve hot with your favorite toppings!
