Blueberry Cheesecake Bars
These delicious Blueberry Cheesecake Bars are a delightful blend of sweet blueberries swirled into a creamy cheesecake filling. Easy to make and perfect for a sweet treat!
Ingredients:
For the Blueberry Topping:
½ cup blueberries
1 tablespoon sweetener of choice (e.g., sugar, honey, or a sugar substitute)
2 teaspoons lemon juice (optional)
Zest of 1 lemon (optional)
For the Cheesecake Filling:
12 oz cream cheese (or vegan cream cheese)
¾ cup plain yogurt (or dairy-free yogurt)
½ cup sweetener of choice
1½ teaspoons pure vanilla extract
1 tablespoon cornstarch (or 4 tablespoons almond flour)
Optional Crust:
You can use a graham cracker crust or an almond flour crust.
Instructions:
Line an 8-inch square pan with parchment paper. If using a crust, press it into the bottom of the pan.
Bring cream cheese to room temperature. Preheat the oven to 350°F (175°C).
Create the Blueberry Topping:
In a small saucepan, combine the blueberries, lemon juice, and 1 tablespoon sweetener.
Cook over medium heat, stirring constantly. Mash with a fork or use an immersion blender until smooth. Set aside.
Make the Cheesecake Filling:
In a blender or mixing bowl, combine the cream cheese, yogurt, sweetener, vanilla extract, and cornstarch. Blend just until smooth; avoid over-blending.
Smooth the filling into the prepared pan.
Assemble the Bars:
Drop spoonfuls of the blueberry topping onto the cheesecake filling. Use a knife or toothpick to swirl it into the filling.
Bake:
Place the pan in the center rack of the oven and bake for 25 minutes.
After baking, turn off the oven but do not open the door. Let the bars sit in the turned-off oven for an additional 10 minutes.
Cool and Chill:
Remove from the oven and allow to cool completely at room temperature.
Transfer to the refrigerator for a few hours (or overnight) to firm up. The bars will set further as they chill.
