Cheesy Garlic Bread Shrimp Grilled Cheese 

Ingredients:
For the Garlic Butter:

1/2 cup unsalted butter, softened
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1/4 teaspoon salt


For the Sandwich:
1 lb (450g) large shrimp, peeled and deveined
Salt and pepper to taste
1 tablespoon olive oil
8 slices of your favorite bread
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 teaspoon red pepper flakes (optional)
Directions:

1️⃣ In a small bowl, mix together the softened butter, minced garlic, chopped parsley, and salt until well combined. Set aside.

2️⃣ Season the shrimp with salt and pepper.

3️⃣ In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and set aside.

4️⃣ Spread a generous amount of the garlic butter on one side of each bread slice.

5️⃣ Assemble the sandwiches by placing a layer of shredded mozzarella cheese on the unbuttered side of half of the bread slices. Add a few cooked shrimp on top of the cheese. Sprinkle with shredded cheddar cheese and red pepper flakes (if using). Top with another slice of bread, buttered side out.

6️⃣ Heat a large skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

7️⃣ Remove from heat and let the sandwiches cool slightly before slicing.
