Ingredients:
For the Crust:
2 cups Biscoff cookie crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
For the Cheesecake Filling:
24 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup Biscoff cookie butter (smooth)
1/2 cup heavy cream
For the Caramel Sauce:
1 cup caramel sauce (store-bought or homemade)


Instructions:
1. Prepare the Crust:
Mix Ingredients: In a mixing bowl, combine the Biscoff cookie crumbs, melted butter, and granulated sugar. Mix until fully combined and the crumbs are evenly coated.
Press into Pan: Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Make sure the crust is even.
Bake: Preheat the oven to 350°F (175°C) and bake the crust for 8-10 minutes. Remove from the oven and let cool while preparing the filling.
2. Make the Cheesecake Filling:
Beat Cream Cheese: In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy.
Add Cookie Butter: Add Biscoff cookie butter and vanilla extract to the mixture and beat until fully incorporated.
Add Eggs: Add the eggs one at a time, beating well after each addition. Lastly, add the heavy cream and mix until the filling is smooth and combined.
3. Assemble the Cheesecake:
Pour Filling: Pour the prepared cheesecake filling over the cooled Biscoff crust. Smooth the top with a spatula.
4. Bake:
Bake the Cheesecake: Lower the oven temperature to 325°F (160°C) and bake for 55-65 minutes, or until the center is set but still slightly jiggly.
Cool in the Oven: Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour to prevent cracking.
5. Chill:
Refrigerate: After the cheesecake has cooled to room temperature, refrigerate it for at least 4 hours or overnight for the best texture.
