Creamy Tuscan Chicken
Succulent Creamy Tuscan Chicken with Sun-dried Tomatoes and Spinach
Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 cup heavy cream
1/2 cup chicken broth
1/3 cup grated Parmesan cheese
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1 cup sun-dried tomatoes (drained and chopped)
2 cups fresh spinach
2 cloves garlic (minced)
Salt and pepper to taste
Directions:
Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and garlic powder.
Sear the chicken for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the sun-dried tomatoes and spinach, cooking until the spinach is wilted.
Add the heavy cream, chicken broth, Italian seasoning, and Parmesan cheese. Stir well to combine and bring the mixture to a simmer.
Return the chicken breasts to the skillet, spooning the sauce over the top.
Simmer for 5-10 minutes, until the sauce thickens and the chicken is heated through.
