Pan-Seared Cod with Tomato Basil Sauce

Here’s a modified version of the recipe for Pan-Seared Cod with Tomato Basil Sauce (non-alcoholic):
Pan-Seared Cod with Tomato Basil Sauce
Ingredients:
Sauce:
2 tbsp olive oil
1/4 tsp crushed red pepper flakes
3 garlic cloves, finely minced
1 pint cherry tomatoes, halved
1/4 cup low-sodium chicken or vegetable broth
1/2 cup fresh basil, chopped
2 tbsp fresh lemon juice
1/2 tsp lemon zest
1/2 tsp salt
1 tsp sugar
1/4 tsp black pepper
Cod:
2 tbsp olive oil
1.5 lbs cod fillets
Salt and pepper to taste
Pan-Seared Mediterranean Cod in Tomato Basil Sauce
Instructions:
1. Sauce: In a pan, heat oil over medium. Add red pepper flakes and garlic, cook 1 minute.
2. Add tomatoes; cook, stirring until softened (8-12 min).
3. Add broth, simmer. Stir in basil, lemon juice, zest, salt, sugar, and pepper. Set aside.
4. Cod: Heat oil in another pan. Pat cod dry, season, and sear each side for 3-4 min.
5. Pour sauce over cod, heat briefly, then serve.
Time: Prep 15 min | Cook 15 min | Total 40 min
Servings: 4 | Kcal: Approx. 350 per serving
