Ingredients:
– 1 lb thinly sliced roast beef (deli-style or homemade)
– 4 sub rolls or hoagie buns
– 8 slices provolone cheese
– 1 tablespoon butter (for toasting the buns)

For the Au Jus Dipping Sauce:
– 2 cups beef broth
– 1 tablespoon Worcestershire sauce
– 1 tablespoon soy sauce
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper (to taste)
– 1 teaspoon fresh thyme or dried thyme (optional)

Directions:
1. Make the Au Jus: In a medium saucepan, combine the beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and thyme. Bring to a simmer over medium heat and cook for 5-7 minutes to blend the flavors. Season with salt and pepper and keep warm.

2. Toast the Buns: Slice the sub rolls in half and butter the insides. Toast them in a skillet or under a broiler until golden and crispy.

3. Heat the Roast Beef: In the same saucepan with the au jus, add the sliced roast beef. Warm it up for 2-3 minutes, ensuring the beef is well coated with the broth.

4. Assemble the Sandwiches: Place a generous amount of the warm roast beef on each toasted roll. Top each sandwich with 2 slices of provolone cheese.

5. Melt the Cheese: Put the assembled sandwiches under the broiler for 1-2 minutes, or until the provolone cheese is melted and bubbly.

6. Serve: Serve the sandwiches hot with a side of warm au jus for dipping. Enjoy with fries, chips, or a simple salad.
