No-Peek Chicken Casserole – the easiest dinner you’ll ever make!
Ingredients:
4 boneless, skinless chicken breasts
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
1 cup long-grain white rice
1 ¼ cups chicken broth
1 packet ranch seasoning mix
½ teaspoon garlic powder
½ teaspoon onion powder
1 ½ cups shredded cheddar cheese
Salt and pepper to taste
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Prepare the Casserole:
Place the chicken breasts in the bottom of the prepared baking dish. In a medium bowl, whisk together the cream of mushroom soup, cream of chicken soup, chicken broth, ranch seasoning, garlic powder, and onion powder until smooth. Pour the soup mixture evenly over the chicken.
Add the Rice:
Sprinkle the uncooked rice evenly over the soup mixture. Do not stir.
Cover and Bake:
Cover the baking dish tightly with aluminum foil. Bake for 1 hour and 15 minutes, or until the chicken is fully cooked and the rice is tender. Remove the foil during the last 15 minutes of baking.
Top with Cheese:
Sprinkle the shredded cheddar cheese over the casserole in the last 5 minutes of baking. Continue baking until the cheese is melted and bubbly.
Serve:
