Cheesy Rattlesnake Bites with a Spicy Kick
Ingredients:
– 1 pound cream cheese, softened
– 1 cup shredded cheddar cheese
– 1 cup shredded pepper jack cheese
– 1/2 cup diced jalapeños fresh or pickled
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper adjust to taste
– 1 cup all-purpose flour
– 1 cup breadcrumbs
– 2 large eggs, beaten
– Vegetable oil for frying
Directions:
1. In a mixing bowl, combine the softened cream cheese, cheddar cheese, pepper jack cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, and cayenne pepper. Mix until all ingredients are well incorporated.
2. Using your hands, form the cheese mixture into small balls, about 1 inch in diameter. Place the balls on a baking sheet and refrigerate for at least 30 minutes to firm up.
3. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
4. Heat vegetable oil in a deep fryer or large pot to 350F 175C.
5. Remove the cheese balls from the refrigerator. Roll each ball in flour, dip it in the beaten eggs, and then coat it with breadcrumbs, ensuring they are fully covered.
6. Carefully place the coated cheese balls into the hot oil, frying in batches until they are golden brown and crispy, about 3-4 minutes. Remove them with a slotted spoon and drain on paper towels.
7. Serve the cheesy rattlesnake bites warm with your favorite dipping sauce, such as ranch or spicy aioli.
