Chocolate Raspberry Cheesecake Crumb Cake
This decadent dessert combines the rich flavors of chocolate and raspberry with a creamy cheesecake filling. Perfect for any occasion, this cake will delight chocolate lovers!
Ingredients
For Crust and Crumb Topping:
3 cups all-purpose flour
⅓ cup cocoa powder
2 teaspoons baking powder
¼ teaspoon salt
⅓ cup light brown sugar
½ cup sugar
¾ cup unsalted butter (cold, cut into small cubes)
2 eggs
2 teaspoons vanilla extract


For Cheesecake Filling:
16 oz cream cheese (softened)
½ cup sugar
2 tablespoons cornstarch
2 eggs (slightly beaten)
1 teaspoon vanilla extract
1 and ⅔ cups raspberries (fresh or frozen)
For Glaze:
½ cup powdered sugar
2–3 teaspoons milk or cream


Instructions
1. Preheat and Prepare Pan:
Preheat the oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper, then spray the bottom and sides with nonstick cooking spray. Set aside.
2. Make the Crust and Crumb Topping:
In a large bowl, stir together the flour, cocoa powder, baking powder, salt, brown sugar, and sugar.
Add the cold butter and work it into the dry ingredients using your hands or a fork until the mixture is grainy.
Add the eggs and vanilla and mix to combine. The mixture should be crumbly. If it’s too sandy, squeeze it with your fingers to form pea-sized crumbs.
Press about ⅔ of the mixture into the bottom and sides (about 1½ inches high) of the prepared pan. Place the pan and the remaining crumbs in the fridge.
3. Make the Cheesecake Filling:
In a mixing bowl, combine the cream cheese, sugar, cornstarch, and vanilla. Mix until smooth.
Add the eggs and mix just until combined; do not overmix.
4. Assemble the Cake:
Pour half of the cheesecake mixture into the chilled crust. Scatter about ⅔ cup of raspberries over the filling.
Spread the remaining cheesecake mixture on top, and then add the remaining raspberries and crumbs on top.
5. Bake:
Bake at 350°F (175°C) for 50-60 minutes, or until golden brown and a toothpick inserted in the center comes out clean. The center should be set.
6. Prepare the Glaze:
In a small bowl, mix together the powdered sugar and milk or cream. Adjust the consistency by adding more powdered sugar if too thin, or more milk if too thick.
7. Finish:
Once the cake has cooled, drizzle the glaze over the top.
