Ingredients:
For the Muffins:
2 cups all-purpose flour
1 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup unsalted butter, melted
1/4 cup milk
1 cup sour cream
2 large eggs
1 tsp vanilla extract
1 1/2 cups fresh peaches, diced

1/2 cup all-purpose flour
1/4 cup brown sugar, packed
1/4 cup granulated sugar
1 tsp cinnamon
1/4 cup unsalted butter, cold and cubed
Instructions:
1. Preheat the oven:
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
2. Prepare the dry ingredients:
In a large bowl, whisk together 2 cups flour, 1 cup sugar, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1/2 tsp cinnamon. Set aside.
3. Mix the wet ingredients:
In a separate medium bowl, whisk together 1/4 cup melted butter, 1 cup sour cream, 2 eggs, 1 tsp vanilla extract, and 1/4 to 1/2 cup milk until smooth and well-blended. The batter should be thick but pourable.
4. Combine wet and dry ingredients:
Create a well in the center of the dry ingredients. Pour the wet mixture into the well and gently fold everything together using a spatula. Avoid overmixing to prevent tough muffins—it’s okay if the batter is slightly lumpy.
5. Add the peaches:
Gently fold in 1 1/2 cups diced peaches. If you toss the peaches in a little flour before adding them to the batter, they’ll be less likely to sink during baking.
6. Prepare the crumble topping:

Sprinkle the crumble topping evenly over each muffin, pressing it down slightly so it sticks.
8. Bake the muffins:
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs. Rotate the pan halfway through if necessary for even baking.
9. Cool and serve:
Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
