Ingredients
For the Fried Pineapple Rings:
8 pineapple rings 
1 cup pineapple juice 
1 1/2 cups all-purpose flour 
1 (10-oz) bag sweetened coconut 
2 large eggs 
1/2 cup coconut milk 
Vegetable oil, for frying 
For the Creamy Coconut Dipping Sauce:
4 oz cream cheese, softened 
1/2 cup powdered sugar 
1 teaspoon vanilla extract 
Coconut milk, for adjusting sauce consistency


Instructions
1️⃣ Soak Pineapple: Place pineapple rings in a bowl and cover with pineapple juice. Let soak for 1 hour, then drain and pat dry with paper towels.

2️⃣ Prepare Coating: Set up three bowls — one with flour, one with sweetened coconut, and one with whisked eggs and coconut milk.

3️⃣ Coat Pineapple: Dip each pineapple ring first in flour, then in the egg mixture, and finally in the coconut, pressing to coat well.

4️⃣ Fry Pineapple: Heat vegetable oil in a deep pot to 350°F (175°C). Fry each ring for about 1 minute per side until golden. Drain on paper towels.

5️⃣ Make Dipping Sauce: In a bowl, mix softened cream cheese and powdered sugar until smooth. Stir in vanilla and add coconut milk as needed to reach desired creaminess.
