Brownie Peppermint Cheesecake 

Rich, creamy, and perfectly festive, this Brownie Peppermint Cheesecake combines decadent chocolate and refreshing peppermint for the ultimate holiday dessert!

Ingredients:

Brownie Layer:

1 box (19.9 oz) brownie mix, plus ingredients required on the box 
Cheesecake Filling:

32 oz cream cheese, softened 
1 1/2 cups granulated sugar 
1/4 cup all-purpose flour 
1/2 teaspoon salt 
1-2 teaspoons peppermint extract 
3 large eggs, room temperature 
1 cup sour cream 
1/2 cup heavy cream 
Pink gel food coloring 
White Chocolate Ganache:

12 oz white chocolate, finely chopped 
1 cup heavy cream 
1 tablespoon corn syrup 
Peppermint Whipped Cream:

1 1/2 cups heavy whipping cream 
1/4 cup powdered sugar 
1/2 teaspoon peppermint extract 
Garnish:

Crushed peppermint candies


Instructions:

1️⃣ Prepare the Brownie Layer:

Preheat oven to 325°F (165°C).
Lightly coat a 9-inch springform pan with nonstick spray. Cover the outside of the pan with foil.
Prepare the brownie mix as directed on the box, then pour batter into the prepared pan.
Freeze for 1 hour, until firm.
2️⃣ Cheesecake Filling:

In a large bowl, beat cream cheese for 1 minute. Add sugar, salt, and flour, mixing until smooth.
On low speed, add eggs one at a time, mixing until just combined.
Mix in sour cream, heavy cream, and peppermint extract, then add pink food coloring.
Pour batter over the brownie layer, spreading evenly with a spatula.
3️⃣ Bake the Cheesecake:

Set the springform pan in a large roasting pan, pouring hot water halfway up the sides.
Bake for 45-50 minutes until the edges are set but the center remains slightly jiggly.
Turn off oven, crack the door, and let the cheesecake cool completely inside.
Once cooled, refrigerate for 5-6 hours, then run a knife around the edges to loosen.
4️⃣ White Chocolate Ganache:

Place chocolate and corn syrup in a bowl.
In a saucepan, bring heavy cream to a simmer and pour over the chocolate.
Let sit for 1 minute, then whisk until smooth and glossy. Pour over the cooled cheesecake and set for 1 hour.
5️⃣ Peppermint Whipped Cream:

In a bowl, whisk heavy cream, powdered sugar, and peppermint extract until fluffy.
Pipe onto the cheesecake with a star tip and sprinkle with crushed peppermint candies.
