Creamy Pistachio Cheesecake Bars
Rich and creamy pistachio cheesecake bars with a nutty crust, perfect for pistachio lovers!
Ingredients
For the Crust:
1 cup graham cracker crumbs
1/2 cup ground pistachios
1/4 cup chopped pistachios
1/4 cup granulated sugar
1/2 cup melted butter
For the Filling:
16 oz cream cheese, softened
1 cup granulated sugar
2 large eggs
1/2 cup Greek yogurt
1 teaspoon vanilla extract
1/2 cup finely chopped pistachios
1/2 cup pistachio paste
1/2 cup sweetened condensed milk
For Garnish:
1/2 cup chopped pistachios
Directions
1️⃣ Preheat Oven: Preheat to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
2️⃣ Prepare the Crust: In a medium bowl, mix graham cracker crumbs, ground and chopped pistachios, sugar, and melted butter. Press evenly into the baking pan and bake for 10 minutes. Let cool.
3️⃣ Make the Filling: In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Add Greek yogurt, vanilla, chopped pistachios, pistachio paste, and condensed milk, blending until smooth.
4️⃣ Assemble and Bake: Pour the cheesecake mixture over the cooled crust, spreading evenly. Bake for 35-40 minutes, until the center is set and edges are lightly browned.
5️⃣ Cool and Chill: Cool to room temperature, then refrigerate for at least 2 hours.
6️⃣ Serve: Cut into bars, garnish with chopped pistachios, and enjoy!
