Szechuan-Style Beef and Shrimp Noodles
Ingredients:
For the noodles and protein:
8 oz egg noodles (or rice noodles)
1/2 lb thinly sliced beef (flank steak or sirloin)
1/2 lb large shrimp, peeled and deveined
1 tbsp soy sauce (for marinating beef)
1 tbsp cornstarch (for marinating beef)
1 tbsp vegetable oil
For the sauce:
1/4 cup soy sauce
2 tbsp hoisin sauce
1 tbsp oyster sauce
2 tbsp rice vinegar
1 tbsp chili paste (adjust to taste)
1 tsp sugar
1/2 tsp Sichuan pepper powder (or regular red pepper powder)
Vegetables and garnishes:
1 bell pepper, thinly sliced (any color)
1/2 cup carrots, julienned
1/2 cup green onions, sliced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
Directions:
1. Prepare the Beef: In a bowl, toss the beef slices with soy sauce and cornstarch. Set aside for 10 minutes.
2. Cook the Noodles: Cook noodles according to package instructions, then drain and set aside.
3. Make the Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, oyster sauce, rice vinegar, chili paste, sugar, and Sichuan pepper powder until well blended.
4. Cook the Beef and Shrimp: Heat vegetable oil in a large wok over medium-high heat. Sear the beef slices until browned on each side (about 2 minutes per side). Remove from the wok and set aside. Add shrimp to the wok and cook until pink and just cooked through. Remove and set aside with the beef.
5. Stir-Fry the Vegetables: Add a little more oil if needed, then add garlic and ginger, stirring for 30 seconds. Toss in bell pepper and carrots, stir-frying until they are tender-crisp (2–3 minutes).
6. Combine Ingredients: Add noodles, beef, and shrimp back to the wok. Pour the sauce over the top, tossing everything together until well coated and heated through. Add green onions and give it one last toss.
7. Serve: Plate the noodles and sprinkle with additional green onions and a pinch more Sichuan pepper for a vibrant presentation.
