Cajun Sausage and Rice
Ingredients:
1 tablespoon olive oil
12 oz beef sausage, sliced
1 medium onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 cups chicken broth
1 can (14.5 oz) diced tomatoes, with juice
1 teaspoon Cajun seasoning (adjust to taste)
1/2 teaspoon paprika
1/4 teaspoon thyme
Salt and pepper, to taste
2 green onions, sliced for garnish
Fresh parsley, chopped for garnish
Directions:
1. Heat olive oil in a large skillet over medium heat. Add the beef sausage slices and cook until browned, about 5 minutes. Remove and set aside.
2. In the same skillet, add onion, green bell pepper, red bell pepper, and celery. Sauté until the vegetables are softened, about 4–5 minutes.
3. Add minced garlic and cook for an additional minute until fragrant.
4. Add the uncooked rice to the skillet, stirring to coat it in the oil and vegetable mixture.
5. Pour in chicken broth and diced tomatoes (with juice). Stir in Cajun seasoning, paprika, thyme, salt, and pepper.
6. Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 18–20 minutes or until the rice is tender and has absorbed the liquid.
7. Add the browned sausage back to the skillet, stirring to combine. Cover and let cook for another 5 minutes to heat through.
8. Garnish with green onions and fresh parsley before serving.
