French Onion Soup Recipe
Ingredients:
4 large yellow onions, thinly sliced
4 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon sugar
4 cups beef broth (or vegetable broth)
1 cup dry white wine (optional)
2 sprigs of fresh thyme (or 1/2 teaspoon dried thyme)
Salt and pepper to taste
1 baguette, sliced and toasted
1 1/2 cups grated Gruyère cheese (or Swiss cheese)
Instructions:
1. Caramelize the Onions:
In a large pot, melt the butter with olive oil over medium heat.
Add the sliced onions and salt, and cook, stirring occasionally, until onions are soft.
Add the sugar, and continue cooking, stirring frequently, until onions are golden brown and caramelized (about 30-40 minutes).
2. Prepare the Soup:
Add the white wine to deglaze the pot, scraping any browned bits from the bottom.
Add the beef broth and thyme. Bring to a simmer and cook for 20-30 minutes. Adjust salt and pepper to taste.
3. Prepare the Topping:
Preheat your broiler.
Ladle the soup into oven-safe bowls, top with a slice of toasted baguette, and generously sprinkle Gruyère cheese on top.
4. Broil and Serve:
Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly.
Garnish with a bit of fresh thyme or parsley if desired. Serve hot.
