Juicy chicken thighs smothered in a rich garlic mushroom sauce make this dish irresistibly flavorful! Perfect for cozy family dinners.
Ingredients:
1.5 lbs (6-8) bone-in, skinless chicken thighs
2 tbsp olive oil
4 cloves garlic, minced
1 cup mushrooms, sliced
1 cup chicken broth
1/2 cup heavy cream
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Directions:
Prepare Chicken: Season chicken thighs with salt and pepper on both sides.
Sear: Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, cooking for 4-5 minutes on each side until golden brown. Remove and set aside.
Cook Mushrooms & Garlic: In the same skillet, add garlic and mushrooms, stirring until mushrooms soften and turn golden, about 3-4 minutes.
Create Sauce: Pour in chicken broth and scrape up any browned bits. Add heavy cream, thyme, and rosemary, stirring until the sauce is well combined.
Simmer: Return chicken thighs to the skillet, spoon sauce over them, and reduce heat to low. Cover and simmer for 15-20 minutes, or until chicken is fully cooked and tender.
