Creamy Smothered Chicken
This smothered chicken is coated in a savory, creamy gravy with caramelized onions, garlic, and herbs, creating a comforting, flavorful dish perfect for any night of the week.
Ingredients:
• 4 boneless, skinless chicken breasts
• ½ tsp salt
• ¼ tsp black pepper
• ½ cup all-purpose flour (for dredging)
• 2 tbsp olive oil
• 1 tbsp butter
• 1 medium onion (thinly sliced)
• 3 cloves garlic (minced)
• 1 cup chicken broth
• ½ cup heavy cream
• ½ tsp dried thyme
• ½ tsp paprika
• ½ cup grated Parmesan cheese
• Fresh parsley (chopped, for garnish)
Directions:
1. Season and dredge chicken: Season chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
2. In a large skillet over medium-high heat, heat olive oil and butter. Add chicken and cook for 5–7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
3. Sauté onions and garlic: In the same skillet, add sliced onions and cook until softened and caramelized, about 5 minutes. Add minced garlic and cook for an additional minute.
4. Make the creamy sauce: Pour in chicken broth, heavy cream, thyme, and paprika, stirring to combine. Bring the sauce to a simmer, then stir in Parmesan cheese until the sauce is smooth and slightly thickened.
5. Return chicken to the skillet: Place the cooked chicken back in the skillet, spooning sauce over each piece. Let it simmer for 3–4 minutes to heat through and absorb flavors.
6. Garnish with fresh parsley and serve hot.
