Savory Smothered Chicken
Tender, juicy chicken breasts smothered in a creamy, flavorful onion and mushroom gravy—comfort food at its finest!
Ingredients:
• 4 boneless, skinless chicken breasts
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon garlic powder
• 1/2 teaspoon paprika
• 1/4 cup all-purpose flour (for dredging)
• 2 tablespoons olive oil
• 2 tablespoons butter
Gravy:
• 1 large onion, thinly sliced
• 8 oz mushrooms, sliced
• 2 cloves garlic, minced
• 1 1/2 cups chicken broth
• 1/2 cup heavy cream
• 1/2 teaspoon thyme
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)
Directions:
1. Season and Dredge Chicken: Season chicken breasts with salt, pepper, garlic powder, and paprika. Lightly dredge each piece in flour, shaking off any excess.
2. Cook Chicken: In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook for 5-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
3. Sauté Onions and Mushrooms: In the same skillet, add onions and mushrooms. Sauté for 5-6 minutes until softened and lightly caramelized. Add minced garlic and cook for another minute until fragrant.
4. Make the Gravy: Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in heavy cream and thyme. Bring to a gentle simmer and cook for 3-4 minutes until the gravy thickens slightly. Season with additional salt and pepper if needed.
5. Combine and Smother: Return the chicken to the skillet, spooning the gravy over the top. Simmer for another 2-3 minutes until everything is heated through.
6. Serve: Garnish with fresh parsley and serve hot over mashed potatoes or rice.
