Flavorful Black Pepper Chicken
Tender chicken tossed in a savory, peppery sauce with crisp veggies—perfect for an easy, delicious stir-fry!
Ingredients:
• 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 2 tablespoons cornstarch
• 2 tablespoons vegetable oil, divided
• 1 bell pepper (red or green), sliced
• 1 small onion, sliced
• 2 cloves garlic, minced
• 1 teaspoon freshly ground black pepper (adjust to taste)
Sauce:
• 1/4 cup low-sodium soy sauce
• 1 tablespoon oyster sauce
• 1 tablespoon rice vinegar
• 1 tablespoon honey or brown sugar
• 1/4 cup chicken broth
• 1 teaspoon cornstarch (to thicken)
Directions:
1. Prepare Chicken: Season chicken with salt and black pepper, then toss in 2 tablespoons of cornstarch until coated.
2. Cook Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add chicken pieces and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.
3. Cook Veggies: Add remaining oil to the skillet. Sauté bell pepper, onion, and garlic until softened, about 3 minutes.
4. Make Sauce: In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, honey, chicken broth, and cornstarch.
5. Combine: Return chicken to the skillet with the veggies. Pour in the sauce, then sprinkle with 1 teaspoon of freshly ground black pepper. Stir and cook for another 2-3 minutes, until sauce thickens and everything is well-coated.
6. Serve: Serve hot over rice or noodles, garnished with sliced green onions if desired.
