Tomato Eggs with Bell Pepper and Garlic
Ingredients:
– Half an onion, julienned
– 200 ml of tomato pulp
– Chopped parsley
– Salt and pepper to taste
– 1 red bell pepper
– 1 head of garlic
– 3 eggs
– Olive oil as needed
– Grated Parmesan cheese

Instructions:
1.Season the red bell pepper and garlic head with olive oil. Cover and bake in the oven at 356°F for 40 minutes.
2.In a pan, heat olive oil and sauté the julienned onion.
3. Add the tomato pulp to the sautéed onion. Season with parsley, salt, and pepper. Cook for a few minutes.
4.After baking, take out the bell pepper. Peel, cut into small squares, and season with crushed garlic and a pinch of salt.
5.Mix the bell pepper into the tomato sauce. Stir well.
6.Make space in the pan and crack the eggs directly into the sauce. Cook until they reach the desired consistency.
7.Serve with a generous sprinkle of grated Parmesan cheese.

This dish pairs well with crusty bread or a slice of toasted bread.
