Golden Southern Hush Puppies – crispy on the outside, soft on the inside
Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon black pepper
1 small onion, finely chopped
1 egg, beaten
¾ cup buttermilk
¼ cup milk
¼ cup unsalted butter, melted

Directions:
Heat the Oil:
In a large pot or deep fryer, heat about 2 inches of oil to 350°F (175°C) over medium heat.
Make the Batter:
In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt, and pepper. Add the finely chopped onion and stir to combine. In a separate bowl, whisk together the egg, buttermilk, milk, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
Fry the Hush Puppies:
Using a spoon or cookie scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches to avoid overcrowding, cooking for 2-3 minutes, or until golden brown on all sides. Remove the hush puppies with a slotted spoon and drain on paper towels.
