Ingredients:

50-60 wonton wrappers
200 g raw shrimp, chopped
1 tbsp grated ginger
2 green onions, chopped
1 tbsp light soy sauce
2 tbsp Chinese cooking wine
1/2 tsp salt
2 tbsp toasted sesame oil
3 cups chicken broth
2 garlic cloves, smashed
1-inch ginger slice
1 1/2 tbsp light soy sauce (for broth)
2 tsp sugar
1 1/2 tbsp Chinese cooking wine (for broth)
1/4 – 1/2 tsp sesame oil (for broth)
Shredded green onions (for serving)
Bok choy or noodles (optional)

Instructions:
Prepare the Wontons: In a bowl, mix the chopped shrimp, grated ginger, green onions, light soy sauce, Chinese cooking wine, and salt. Place about a teaspoon of the mixture in the center of each wonton wrapper. Wet the edges of the wrapper with a little water, fold it in half, and pinch the edges to seal. Set aside.

Make the Broth: In a pot, heat the chicken broth over medium heat. Add the smashed garlic cloves, ginger slice, 1 1/2 tbsp light soy sauce, sugar, and 1 1/2 tbsp Chinese cooking wine. Bring to a simmer.

Cook the Wontons: Carefully drop the prepared wontons into the simmering broth. Cook for about 5-7 minutes, or until they float to the surface and are cooked through.

Finish the Soup: Stir in the toasted sesame oil and adjust the seasoning with sesame oil (1/4 to 1/2 tsp) if desired.

Serve: Ladle the soup into bowls, adding bok choy or noodles if you like. Top with shredded green onions and enjoy
