Jalapeno Peach Chicken Recipe

Ingredients:

4 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

1 cup peach preserves

2 fresh peaches, diced (or 1 cup canned peaches, drained and chopped)

1–2 jalapeños, thinly sliced (adjust to spice preference)

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon apple cider vinegar

1 teaspoon paprika (optional, for added flavor)

Fresh cilantro, chopped (for garnish)



Instructions:

1. Prepare the Chicken:

Season chicken breasts with salt, pepper, and paprika (if using).

Heat olive oil in a large skillet over medium-high heat.

Sear the chicken for 3–4 minutes on each side until golden brown. Remove and set aside.

2. Make the Sauce:

In the same skillet, reduce heat to medium. Add garlic and sauté for 1 minute until fragrant.

Stir in peach preserves, diced peaches, jalapeños, soy sauce, and apple cider vinegar. Simmer for 2–3 minutes.

3. Cook the Chicken in the Sauce:

Return the chicken to the skillet. Spoon the sauce over the chicken, ensuring it’s well coated.

Cover and simmer for 10–15 minutes, or until the chicken is fully cooked (internal temperature of 165°F).

4. Serve:

Garnish with fresh cilantro and extra jalapeño slices, if desired.

Serve with rice, quinoa, or roasted vegetables.

Tips:

For extra spice, add a pinch of cayenne pepper to the sauce.

If you prefer less heat, remove the seeds and membranes from the jalapeños.
