Grilled Chicken Kebabs
Fire up the grill for these succulent Grilled Chicken Kebabs, marinated for perfection and skewered with fresh vegetables. They’re ideal for a BBQ or a casual family dinner!
Ingredients:
2 pounds chicken breasts, cut into cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 large onion, cut into chunks
1/4 cup olive oil
3 tablespoons lemon juice
3 cloves garlic, minced
2 teaspoons dried oregano
Salt and pepper to taste
Fresh parsley, chopped for garnish
Marinade:
1/2 cup plain yogurt
2 tablespoons olive oil
Juice of 1 lemon
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
Instructions:
Prepare the Marinade:
In a large bowl, combine the yogurt, olive oil, lemon juice, minced garlic, paprika, oregano, salt, and pepper.
Mix well to combine all the ingredients.
Marinate the Chicken:
Add the chicken cubes to the marinade and toss to coat evenly.
Cover and refrigerate for at least 2 hours, or overnight for best results.
Prep the Kebabs:
Thread the marinated chicken, bell peppers, and onions onto skewers alternately.
Grill the Kebabs:
Preheat the grill to medium-high heat.
Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and the vegetables are slightly charred.
Serve:
Sprinkle chopped parsley over the cooked kebabs for added flavor and color.
