Ingredients

  • 4 teaspoons corn oil
  • 12 (6 inch) corn tortillas, torn into bite-size pieces
  • 6 eggs, beaten
  • salt to taste

Directions

  1. Heat oil in a large skillet over medium-high heat. Fry tortilla pieces in the hot skillet, stirring constantly, until just starting to get crisp.

  2. Pour eggs into the skillet and stir until cooked through. Season with salt and serve immediately.
