Ingredients:

Burger Patties:

1 lb ground beef (preferably 80% lean)
Salt and black pepper to taste
Onions:

2 large onions, thinly sliced
Cheese:

8 slices American cheese or cheddar cheese
Toppings:

4 burger buns, toasted
2 tbsp butter for toasting buns
Sliced pickles
Ketchup
Yellow mustard

Instructions:

Prepare the Onions:

In a large skillet, heat a tablespoon of oil over medium heat.
Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 10-15 minutes. Remove from heat and set aside.
Preheat the Skillet or Griddle:

Heat a large cast-iron skillet or griddle over medium-high heat until it is very hot. You want the surface to be hot enough to sear the burgers quickly.
Prepare the Beef:

Divide the ground beef into 8 equal portions and gently shape each portion into a loose ball. Do not overwork the meat to keep the burgers tender.
Cook the Burger Patties:

Place a ball of seasoned ground beef in the hot skillet.
Using a sturdy spatula, firmly press down on the beef ball to flatten it into a thin patty. Hold the pressure for about 10 seconds to ensure a good sear.
Season the patty with salt and black pepper. Top each patty with a generous amount of caramelized onions.
Cook for about 2-3 minutes until the edges are crispy and browned.
Flip the patty with onions and immediately place a slice of cheese on top. Cook for another 1-2 minutes until the cheese is melted and the burger is cooked through.
Repeat with the remaining beef balls to make 8 patties.
