Orange Jello Top Layer:

½ cup cold water

 Directions
1. Prepare the Crust:

In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust.
Chill the crust in the refrigerator while you prepare the filling layers.

2. Create the Orange Cream Cheese Layer:

In a small bowl, sprinkle the powdered gelatin over 3 tablespoons of cold water to bloom. Let it sit for 5 minutes.
In a separate large bowl, beat the softened cream cheese and powdered sugar until smooth.
Add the orange juice concentrate and orange zest (if using) to the cream cheese mixture and beat until well combined.
In another bowl, whip the heavy cream to stiff peaks.
Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Microwave the bloomed gelatin for about 10-15 seconds until dissolved, then gently fold it into the cream cheese mixture.
Pour the orange cream cheese layer over the chilled crust and spread evenly.
Place in the refrigerator to chill and set while preparing the next layer.

3. Create the Classic Cheesecake Layer:

Repeat the same steps as the Orange Cream Cheese Layer for the classic cheesecake layer.
In a small bowl, bloom the powdered gelatin in 3 tablespoons of cold water.
Beat the cream cheese and powdered sugar until smooth, then add the vanilla extract.
Whip the heavy cream to stiff peaks and fold it into the cream cheese mixture.
Dissolve the bloomed gelatin by microwaving for 10-15 seconds, then fold it into the cream cheese mixture.
Pour the classic cheesecake layer over the set orange cream cheese layer and spread evenly.
