Vanilla Cake + Balsamic Roasted Strawberry Buttercream

This elegant and flavorful dessert features layers of moist vanilla bean cake topped with the tangy and sweet richness of balsamic roasted strawberry buttercream. Finished with a garnish of roasted strawberries, it’s a perfect balance of sweet and savory.

Ingredients:
Vanilla Bean Cake:

1 3/4 cups cake flour
1 3/4 tsp baking powder
1/2 tsp salt
6 tbsp unsalted butter, room temp
1/4 cup vegetable oil
1 1/4 cups granulated sugar
3 large eggs
1 tbsp vanilla bean paste
3/4 cup whole milk
Balsamic Roasted Strawberries:

6 cups sliced strawberries
1/4 cup light brown sugar
6 tbsp balsamic vinegar
Balsamic Roasted Strawberry Buttercream:

1 1/2 cups unsalted butter, softened
5 cups powdered sugar
Pinch of salt
3/4 tsp vanilla bean paste
5-6 tbsp strawberry puree

Instructions:

1️⃣ Vanilla Bean Cake: Preheat the oven to 350°F (175°C) and prepare three 6-inch cake pans with butter, flour, and parchment paper.

2️⃣ Mix Dry Ingredients: In a medium bowl, whisk together cake flour, baking powder, and salt. Set aside.

3️⃣ Cream Butter and Sugar: In a large bowl, cream butter, oil, and sugar until light and fluffy (3-4 minutes).

4️⃣ Add Eggs: Reduce speed to low, adding eggs one at a time. Then, mix in vanilla bean paste.

5️⃣ Combine: With the mixer on low, alternate adding flour mixture and milk in 3 and 2 additions respectively.

6️⃣ Bake: Divide the batter between the prepared pans and bake for 22-25 minutes, or until a toothpick comes out with a few moist crumbs. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

7️⃣ Balsamic Roasted Strawberries: Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.

8️⃣ Roast Strawberries: Toss strawberries with sugar and balsamic vinegar, then spread evenly on the baking sheets. Roast for 30-35 minutes, until caramelized. Cool completely.

9️⃣ Strawberry Puree: Puree half of the strawberries in a blender, reserving the other half for topping.

Roasted Strawberry and Mascarpone Cake

🔟 Strawberry Buttercream: Beat butter on medium-high speed until fluffy. Gradually add powdered sugar, mixing after each addition. Add salt, vanilla bean paste, and strawberry puree one tablespoon at a time until desired consistency is reached.

1️⃣1️⃣ Assemble Cake: Level the cakes. Attach the first cake layer to a cake board with a small amount of buttercream. Layer with frosting, repeating for the second layer.
